Ly Quan is bringing the authentic, vibrant flavours of Vietnam to the heart of Hobart, and we are looking for a dedicated Kitchen Leader Chef to steer our culinary team. Key Responsibilities
As the Kitchen Leader, you aren't just cooking; you are the guardian of our kitchen's efficiency and quality. Your role includes:
Operational Leadership: Managing daily kitchen operations to ensure smooth service and consistent food quality.
Opening & Closing: Full responsibility for kitchen setup and secure shutdown procedures.
Inventory Management: Implementing strict First In, First Out (FIFO) stock control to minimize waste and ensure freshness.
Recipe Adherence: Ensuring every dish that leaves the pass strictly follows our established recipes and presentation standards.
Compliance: Maintaining a gold standard of cleanliness and food safety protocols.
Requirements
We are looking for a disciplined professional who meets the following criteria:
Experience: Minimum of 2 years of professional experience specifically in Vietnamese Cuisine.
Technical Skill: Mastery of Vietnamese flavour profiles, wok techniques, and traditional noodle soup preparation methods.
Certifications: Food Safety Supervisor certification is highly desirable.
Leadership: Proven ability to lead a team, manage high-volume service, and stay organised under pressure.
Precision: An uncompromising eye for detail and a commitment to consistency.
